Jenna’s (Used to be Martha Stews) Chocococo Pie

COCO-NUTS seem to be the theme for today!

My friend Jenna made this DEE-lish pie for my day (APRIL 7th!) and I decided to share this awesome (PLUS gluten free) recipe . But first, meet Jenna. Jenna and I met when we were little toddlers, after she peed on my bike. I forgave her ( but not forgotten) and we have been friends ever since!

The best part of this recipe is that it only takes 4 simple ingredients:  Butter, Chocolate, Cream, and COCONUT! Jenna said it was super simple, and she wasnt lying! She also brought over  alcohol infused whipped cream. Not terrible..but not amazing. That stuff is very strong for a whipped cream. Check it out…
 
MAKES ONE 9-INCH PIE
 
 THE CRUST
4 tablespoons unsalted butter,softened
11 ounces (about 6 cups) sweetened shredded coconut

FOR THE FILLING
1 cup heavy cream
8 ounces bittersweet chocolate (preferably 61 percent cacao), finely chopped * Jenna used two types of Ghiradelli chocolate, do this you wont regret it

1. Make the crust: Preheat oven to 350°F. In a food processor, process butter and one- third of coconut until mixture forms a ball, 1 to 2 minutes. Transfer to a medium bowl. Sprinkle remaining two-thirds coconut over mixture, and combine with your fingers.

2. Place a 9-inch pie plate on a parchment- lined rimmed baking sheet. Press coconut mixture into bottom and up sides of pan to form crust, leaving top edges loose and fluffy. Place a foil ring over edge to prevent burning. Bake until center begins to brown, 10 to 15 minutes; remove foil, and bake until edges are browned, 4 to 6 minutes more. Transfer crust to a wire rack to cool completely.

3. Make the filling: Bring cream just to a boil in a small saucepan; pour over chocolate in a medium heatproof bowl. Let sit 10 minutes, then stir until chocolate is completely melted and mixture is combined. Pour into coconut crust. Refrigerate until filling is set, 1 hour or up to 1 day.

This pie resembles a really ridiculously amazing chocolate truffle. The quick crust was butter-y and toasted perfectly. My family loved it! Thanks Janho!

 

Cookies for breakfast, dry shamp, and a marry me plea!?

First things first….i had a COOKIE, as in one. But they were coconut cookies, and trans fat free, and did i mention i only had one?

Coconut, no trans-fats, a brand I've never heard of. Can't be THAT bad..wrong

After my cooky (isnt -ie supposed to be plural? e.g: babies, baby), i took a gander at the NI. oh 90 calories thats not bad….WHAT FOR ONE!?!?! bummer….moving on.

I have to be in work, in NYC, at 7:30. So to get there on time i leave at 6:15 AM to catch a bus, to catch the subway and to walk. Had plans to shower at 5AM and failed. THANK GOD for the dry shamp. I think this stuff works better on blondes, because it dries white, and after you brush it you may find some squatters later on chillin’ in your scalp.

I have never tried other brands, but this one fit the budge, and gets the job done for me.
This morning, i felt so SLEEPY, even though it is always easier to get outta bed on Friday mornings, but i was just not having it. I put out a plea for someone who has alot of money in their account to marry me. But they lost their chance, because I didnt get the rock before I hopped on the bus to go to work. I’m just over working. Don’t get me wrong, I understand the whole make your own money, be an independent woman thing. But working and doing anything for that matter, makes more sense to ME.  But love is important too.

I ran my first 10k last weekend. My friend Caroline (read as: CARE) joined me. it was held in central park, called the Scotland Run. I had a blast, and finished in 1:06. Slow to many, but i was just glad i ran the whole thing without stopping. Apparently, the first 2.5 miles were uphill. i noticed the hills, but it really wasnt THAT bad. Ive done a 5k in a valley before, and those hills were KILLER, these were more like gradual inclines. OH! How can i forget..I puked and rallied. just like college baby (actually thats a lie, puke and pass out was more of my kinda style)ANYWAY, would hate to spoil my reputation (or your appetite) on my first day here!…

I’m hoping that, im not just going to be really into this running thing for a few weeks and then forget about it. thats what usually happens. Like when i joined weight watchers, i became so obsessd and thought it was FUN. yeah, 3 weeks later, not so much. WHAT DIET!?!

Must have been really fun because I decided to sign up for new york road runners and for anoither 10k! Eventually id like to do a half marathon. I really need a running buddy..any takes? whooaa calm down ya’ll not all at once!!!

Has anyone else ever gotten really obsessed with something and then all of a sudden, you forgot that it even existed?

I love when i REALLY think i am going to love something and start to vision the future. This has happened with losing weight and new diets, owning my own gym, moving to another state, and thinking that I can PAINT. It is fun to be kinda obssessed with something, but why cant i just love one thing for more than 2 weeks?!

this really hurts

Thank you for visiting. As my very first post, I wanted to just introduce myself. My name is Lisa, i  food, working out, and reading blogs. By putting the 3 together and finding other blogs, I finally decided to give it a go! I currently reside in New Jersey ( New Joisey, or the Jersey shaw), 10 miles outside of NYC.  

I am very random. I should warn you that I tend to throw a bunch of random thoughts into the same paragraph. I have too many thoughts and when I have it I need to get it down. And if i dont, well I dont. ANYWAY…see there i go:) And look at that, I already forgot where I was going.

I majored in Exercise Science, and now work in finance (sorta, does assistant count) in NYC. I tend to be a slob, definitley NOT a perfectionist, which seems to be a common trait out there with all the bloggers. You will find typos, and missing words within sentences. Dont judge, i know how to spell but I am to too lazy to add ‘ to dont and capitalize my I. And if i had to cross my t’s, I’d probably forget that too. Not my fault ive been brain washed by texting, and AIM/AOL chat since 1998. Speaking of 1998, I’m 24 years old (birthday april 7, presents in forms of chocolate and candy are welcome).
